To celebrate Utkal Divas and honour Odisha’s culinary soul, the Institute of Hotel Management (SHM) at SOA University has launched its annual five-day Pakhal festival, running from April 1 to 5.

Inaugurated by Vice Chancellor Professor Pradeep Kumar Nanda, the event highlights Pakhala (fermented rice) not just as a seasonal staple, but as a healthy, stress-busting dish central to Odia identity. Beyond the plate, the festival showcases the state’s rich heritage, featuring rural-themed decor and handicrafts crafted by SHM students.

Festival Highlights:

The Menu: Guests can savor varieties like Dahi Pakhala, Ada Pakhala, and Chhunka Pakhala.

Accompaniments: A sprawling spread of traditional sides, including Chingudi Chhecha, Fish Patra Poda, Badi Chura, and various roasted delicacies (Bhaja).

The Experience: Students in traditional attire will serve guests daily from 12 PM to 3 PM, offering a true taste of Odia hospitality.

Dean Susanta Ranjan Chaini emphasized that the festival aims to bridge global interest with local traditions, preserving the authentic flavors that every Odia craves during the summer heat.
